Brainard’s Mighty Meatloaf

Lean Ground Beef |

1 lb |
Ground Pork |
|
1 Can |
Original Rotel Tomatoes |
|
1 Small |
Onion, chopped |
|
1 |
Egg |
|
|
Salt/Pepper to taste |
|
1 cup |
Saltines, Crushed |
Sautee Onions in butter until carmelized, set aside to cool
Mix all ingredients thoroughly.
Press into bread pan (or lined dutch oven).
Cover with a layer of ketchup.
Bake 375 for 1 hr 15 min covered.
Finish baking uncovered for 15 minutes (conventional oven only) to brown top.
Enjoy.
